Prime cost

Prime = food COGS + beverage COGS + labor. Prime % = prime / total sales.

Use usage for food and beverage, and include payroll taxes and benefits in labor. The 65 percent limited-service median on the benchmark page is not a target.

The lines you can change are fields. The other lines are the result. With scripts off, the opening answer is still printed in the table.

Worked example. Beverage is zero so the addition stays obvious.
Line Amount
Prime cost 25,740
Prime cost % 60.1%

Does this include rent?

No. Rent is occupancy. Prime cost is the food, beverage, and labor you can still change this week.
