Separate the amounts that are not yours
A Toast or Square deposit often mixes guest checks, tax, and tips, then subtracts card fees. The books need gross sales, discounts, sales tax payable, tips payable, fees, and a clearing account that ties the batch to the bank. Folding all of that into one revenue number makes both the food-cost percentage and the sales-tax return drift.
Watch the week, not only the month
Payroll and food vendors do not wait for the month-end packet. A 13-week cash view is a list of what is already promised: payroll, rent, tax, and the invoices that will draft. This hub has no shorter child guide yet. The month-end close hub is the companion, because a close that ignores the bank is a paper close.

Short answers to the questions this page is built to settle.
Why can sales be up and cash be tight?
Sales tax and tips can be in the deposit and still owed to someone else. A big delivery can also leave next week's cash already promised.
